(62° F.) ~ Seasons clearly marked with warm summers and cool winters Winemaking Method: ~ Grapes are selected and picked by hand ~ Second selection process in the winery ~ Short cold maceration of grapes for 3 days in stainless steel tanks prior to fermenting ~ Total maceration during 10 days ~ Daily délestages ~ Fermentation between 22°C and 26°C Winemaker´s Notes: Don Pascual is a tribute to Pascual Harriague, a French-Basque who introduced the Tannat grape variety to the Uruguayan vineyards. The ripeness of Tannat depends very much on the terroir and climate which is favourable in the Juanicó region. It allows for good development of the grape and combined with special care and attention in the vineyards and winery allows us to produce this everyday wine. Appearance: Deep purple with tones of garnet Nose: Aromas of pine, liquorice and jammy fruits such as figs and plums Palate: Dry on the palate, very aromatic with smooth and soft tannins. A powerful structure with long finish Serving temperature: 18° to 20° C. Food pairings: Good to accompany roasted or barbequed meat, strong cheese, game, goulash and any other well-flavoured dishes.
