Varieties: Sauvignon Blanc 85% & Sauvignon Gris 15% Kilograms per hectare: 10,000 Hectolitres per hectare: 60-65 Region: Juanicó Soil type: Chalky – clay Climate: ~ Temperate with ocean influences ~ Mean annual temperature of 16.6° C. (62° F.) ~ Seasons clearly marked with warm summers and cool winters Winemaking method: ~ Grapes are hand picked in the early hours ~ They are then protected from coming into contact with oxygen with the use of dry ice ~ Juice is extracted by pneumatic press and immediately chilled to +5°C ~ Must and skins separated ~ Juice then fermented using selected yeasts between 14°C and 16°C for 10 to 12 days ~ Aged “sur lies” for approximately 2 months Winemaker´s notes: An expressive Sauvignon that combines the intense citrus and tropical aromas of Sauvignon Blanc with the rich character and structure of Sauvignon Gris. Appearance: Pale straw with hints of green. Nose: Fragrant aromas of grapefruit, guava and passion fruit. Palate: Ripe and citrus notes, fresh acidity with a hint of sweetness. Serving temperature: 6° to 9° C. (43° to 48° F.) Food pairings: Especially recommended as an aperitif or to accompany seafood and fish dishes. Also available in 375 ml & 187 ml. |
