Climate:
~ Temperate with ocean inuences
~ Mean annual temperature of 16.6° C. (62° F.)
~ Seasons clearly marked with warm summers and cool winters

Winemaking Method:

~ Grapes are hand picked in the early hours
~ Fermented very cool similar to the wine making practices of the Champagne region
~ Fermented with grape juice from the rst pressings of Pinot Noir and Pinot Meunier
~ Juice quickly cooled to +5°C
~ Must and skins separated
~ Juice then fermented using selected yeasts between 14°C and 16°C for 10 to 12 days

WineMaker´s Notes:

The principal characteristic of this wine is the intensity of the fruit and typical elegance of those wines with a champagne base. Young, fresh, approachable wine.

Appearance: Stylish pale salmon colour

Nose: Intense and complex fruity aromas with a touch of wild forest mushrooms

and fresh strawberries.

Palate:
Balanced and lasting character, harmonious and dry.
