Winemaking Method:

~ Before harvest time grapes must reach the ideal maturity

~ Selection process tasting berries and analyzing seeds

~ Grapes are selected and hand picked from the vineyard

~ Second selection process grape by grape at the winery

~ Cold maceration before fermentation during 4 days

~ Fermentation between 24° C and 28° C

~ Post fermentation maceration

~ 30% of wine: Oak ageing during 3 months

Winemaker´s Notes:

In the southern part of Uruguay Cabernet Franc can reach an ideal polyphenolic ripeness which allows us to maintain the aromatic qualities in every harvest.

Appearance: Intense purple colour with violet tones

Nose: Mineral aromas with notes of red peppers, spices, chocolate and almonds

Palate: Expressive wine which surprises the palate through pleasant yet marked tannins. Notes of plums, raisins and blackberries along with fresh notes of eucalyptus, mint and pepper.

Serving temperature: 16-18 ºC

Food pairings: The perfect partner for lamb and grilled tuna fish.
